3 Ingredient AIP/Low FODMAP Pizza Crust

Paleo pizza crust

Ingredients

  • 1/3 cup coconut flour

  • gelatin egg ( 2/3 cup water & 1.5 scoops Vital Proteins gelatin) or sub 2 eggs

  • Italian seasoning to taste (check label for compliance)


Instructions

  1. Preheat oven to 425° F.

  2. In a medium sized mixing bowl combine coconut flour, seasoning, and gelatin eggs (or regular eggs) using your hands until dough forms.

  3. Spread the dough onto a parchment lined pizza pan. Using your hands or a rolling pin to shape the pizza. Dough will be very thin.

  4. Use a fork to poke several wholes in the dough.

  5. Bake for 6 minutes. Add your desired toppings and bake an additional 4-6 minutes depending on your toppings. (I topped mine with pesto, zucchini spirals, shredded chicken, and arugula.)

  6. Allow to cool and enjoy!
