Asian Veggie Chicken Poppers (AIP/Low FODMAP option)

CLEAN INGREDIENT FOODS


I first came across the Simple Squares organic snack bars in my Monthly Subscription Box from Paleo by Maileo. It was the Sage flavor and at first I was pretty hesitant to try it based on the flavor. I checked out the ingredients (Organic Cashews, Organic Almonds, Organic Honey, Organic Unsweetened Coconut, Organic Vanilla, Sea Salt, Organic Sage ) and couldn’t believe how clean they were. I opened the package and took a bite not knowing what to expect. WOW! The flavor, the texture everything was spot on. I was instantly hooked. My kids loved them too. Double win!!I love supporting companies that provide genuinely nutritious food without added unneeded/unwanted ingredients. I wanted to come up with some fun out of the ordinary recipes using their bars. This one was a hit in my book. I hope you try it and find it just as addicting as I did.




ASIAN VEGGIE CHICKEN POPPERS/PATTIES



Ingredients

  • 3 chicken breasts

  • 3 carrots

  • 1 zucchini

  • 4 green onions (green parts only)

  • juice from 1 lemon

  • 1 tbsp fresh chopped ginger

  • 2 tbsp coconut oil

  • 2 tbsp coconut flour

  • 2 tbsp of coconut aminos (or more to taste)

  • 2 Simple Squares organic snack bars ginger flavor (omit for AIP/Low FODMAP)salt to taste


For the Asian Popper Sauce

  • 2 tbsp sunbutter (sub coconut butter for AIP/Low FODMAP)

  • 1 tbsp avocado oil

  • ½ tbsp coconut aminos


Instructions

  1. Preheat oven to 375° F

  2. Combine all ingredients in a food processor (or a high powered blender) and blend on high until well combined. If you have a smaller food processor you may need to do it in smaller batches and then continue to combine in a bowl.

  3. Roll into smaller sized balls and place on a parchment lined baking sheet. The size and shape will depend on your preference. You can make them the size of a burger patty or small balls for appetizers.

  4. Bake in the oven for 25-30 minutes depending on size.

  5. Combine ingredients for the sauce in a small bowl and whisk with a fork until combined.

  6. Once poppers are done cooking and cooled serve with sauce and enjoy! You can serve them on your favorite paleo bun, over a bed of greens, over veggie noodles, or on their own with the sauce for dipping. The possibilities are endless.
