It's Here!

My very fist blog post!! Wow, this has been a long time coming. Between life and procrastination…. heavy on the procrastination, I have been putting this off for oh, you know, like a four years now. Yes, that’s right I first wanted to start a blog four long years ago but I have been completely intimidated by the idea of it. So here we are four years later and my blog is still empty. Until today of course!



My First Recipe


My ideas of what was healthy was so different back then. I laugh at it now. I completely fell for all of the marketing advertisements like “low fat,” “sugar free,” “baked,” and anything marked “healthy.” I mean the roll out dough you find in tubes in the refrigerated section of the grocery store is good for you when you bake it in the oven topped with veggies and cheese right?!?!?! Oh just how wrong I was but we have all been there right?!!? Maybe some of you were blessed with growing up in a family who already knew this but we were all still learning. It wasn’t until I started doing my own research, when you are breastfeeding a 10 pound new born every two hours until he is 13 months old you have a lot of time to kill and researching health and fitness seemed appropriate, I started to learn the true meaning of health and if only furthered my interest on the topic.


With my new knowledge I started to slowly transition to paleo. Starting with eating more whole foods and buying less and less prepackaged stuff. Oats were the last thing to go for me as they are naturally gluten free and I sure did love my morning bowl of oatmeal. I did my first Whole30 about a year into being paleo and a second time a few months later. I finally had the hang of it. I still resort back to those early recipes, no not the ones catered by the Pillsbury Doughboy, but the ones with more natural sugar than I eat on a daily basis, like this gem. Try them out and leave a comment, perhaps with a new and improved name! ;)



Paleo Chocolate Chip Cookie Bar


Ingredients


1 tsp baking soda 1 tsp pure vanilla extract

1 tsp salt 1/2 cup coconut oil

1 tsp salt 1/2 cup coconut oil

1 1/2 cups chocolate chips 2 whole eggs


Instructions


1. preheat oven to 375 F

2. In a medium sized mixing bowl combine dry ingredients

3. In a small mixing bowl beat eggs with a hand mixer. Add syrup and vanilla until combined.

4. pour wet ingredients into dry ingredients and combine with a hand mixer

5. melt coconut oil and pour into batter and combine.

6. Stir in chocolate chips

7. pour into an 8×8 square pan

8. bake for 15 minutes or until baked through

9. let cool and cut into bars.
