Pumpkin Spice Cookies



It’s that time of year again! Time for the pumpkin everything craze!! Growing up my favorite season was always summer. I could never understand why people liked fall so much. Yes, the colors are beautiful but so is the emerald green of an Iowa summer. Summers in Iowa were perfect, not too hot, not too cold. Summer meant no school, playing outside, and lots of time at the pool. I didn’t like fall because that meant the cold cold cold days of winter were just around the corner. It meant having to trudge through feet of snow that dampens your clothes and chills you too your bones was quickly approaching. It meant winter… my least favorite of all the seasons was too close. Why do I hate winter so much?!?! Because I hate being cold all the time, for months on end.


Then at the age of 19 I moved to Oklahoma. My husband and I got married at the age of 19 just after he finished his tech school for the Air Force. His first assignment would be in Enid, Oklahoma. It was January and when we arrived the temperature was in the 70’s. Coming from snowy Iowa, all I packed were winter clothes. Summers in Oklahoma were nothing like summers in Iowa. Oklahoma summers were so so hot. Being outside was not enjoyable….at allllll. You couldn’t touch anything for fear of being burned. As soon as you stepped outside you felt like the life was being sucked out of you due to the heat. One summer we had 100 straight days over 100 degrees. I know I know, some of you are probably laughing at this. Some of you have hotter temps all year around. But for me this was my first experience with this type of heat. And for the first time I could understand why someone would not love summer the way I did as a child. I didn’t even love summer anymore.


Fall, believe it or not became my favorite season. The loathing I felt as a child for this season was now replaced with a new found love for the smells, the sights, and of course the food! I finally jumped on the pumpkin spice bandwagon in my mid 20’s which changed my life forever. I can’t believe what I was missing out on all those years! Like most of you it tops my list for one of the reasons why I love fall so much. Pumpkin spice lattes, pumpkin bread, pumpkin chili, pumpkin soups, pumpkin smoothies, and of course these amazing pumpkin cookies.


Ingredients


1/4 cup coconut flour

1/4 cup arrowroot flour

1/4 cup canned pumpkin purée

1/4 cup honey

1/2 cup brown butter (I prefer Tin Star Foods)

2 eggs

1 tsp pumpkin pie spice (or more to taste)

1/2 tsp Himalayan salt

1/2 tsp baking soda

chocolate chips (I prefer Enjoy Life)


Directions

  1. Combine ingredients

  2. Place in the refrigerator for one hour

  3. Bake at 350 for 10-15 min
