Steak Zoodle Soup

Well it has officially been a month since I returned home from the desert and being a “single” mom while my husband is still deployed. It was quite stressful coming home and basically starting our lives from scratch. I had one week before the kids started the new school year. We had school supplies to buy and a house to restock, bugs to remove… (don’t even get me started about this one) and a fallen light fixture to replace… (this one either). We jumped right back into gymnastics and Sunday school for the kids, doctors and dentist appoints to get caught up on. Trying to fit in workouts and running while making sure I get good quality time in with the kids. Somehow, to my surprise I managed to get everything done and get us set up on a good temporary routine to help our lives move a little more smoothly. I still find myself jumping from one task to another never really finishing anything. If I don’t wright things down I just completely forget about them.


For instance I had picked up a stake at Wholefoods on one of my weekly grocery runs but completely forgot what I intended to use it for. So it sat in my refrigerator all week while I tried to remember but it just wouldn’t come back to me. I couldn’t let a perfectly good stake go waste… I could freeze it but then I would be short a meal. So I pull out everything I have left over from the previous shopping trip to try to figure out what I could throw together. Trust me I have made quite a few not so good, completely terrible meals, interesting, questionable meals using this method more often than not. However, this time something magical happened! I stumbled upon a recipe I can’t wait to make again and again! Try it out and let me know if you enjoyed it as much as I did!


Ingredients

  • 1 package of Bare Bones Broth tomato and spice beef bone broth

  • 1 cup tomato sauce with no added sugar (I used Thrive Market)

  • 1 zucchini spiraled

  • 1 yellow squash spiraled

  • Steak

  • 1 tomato

  • 1 red pepper

  • 1/2 an onion

  • Salt/pepper/garlic to taste


Directions

  1. Cut steak into strips

  2. Cook steak on the stove in a large skillet

  3. Remove steak and use the grease to cook the onions, tomato, and pepper

  4. Add the tomato sauce and bone broth until well heated

  5. Add the stake back in, season, and let simmer

  6. Serve over squash and zucchini
